200g fresh udon noodles

3 tablespoons chili oil (store-bought or homemade)

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 garlic clove, minced

1 green onion, finely sliced (for garnish)

1 tablespoon toasted sesame seeds (for garnish)

Fresh cilantro leaves (optional, for garnish)

Salt to taste

Instructions
 

Bring a large pot of salted water to a boil. Add the udon noodles and cook according to package instructions, usually about 3-4 minutes.

    While the noodles are cooking, combine the chili oil, soy sauce, rice vinegar, sesame oil, and minced garlic in a small bowl. Mix well to create the sauce.

      Once the noodles are cooked, drain them in a colander and rinse briefly with cold water to stop the cooking process and remove excess starch.

        In a mixing bowl or directly in the pot, toss the drained udon noodles with the prepared sauce, ensuring the noodles are well-coated.

          Transfer the noodles to a serving bowl. Garnish with sliced green onions, toasted sesame seeds, and fresh cilantro leaves if desired.
