2 cloves garlic, minced

1 inch piece of ginger, grated

1 teaspoon sugar

4 green onions, sliced

1 cup bok choy or spinach (optional)

1 tablespoon sesame seeds (for garnish)

Salt and pepper to taste

Instructions

Cook the Udon Noodles: Bring a large pot of salted water to a boil. Add the udon noodles and cook according to package instructions (usually around 8-10 minutes). Once cooked, drain and set aside.

Make the Sauce: In a large skillet over medium heat, add chili oil, soy sauce, sesame oil, minced garlic, grated ginger, and sugar. Stir and cook for about 1 minute until fragrant.

Add Greens (Optional): If you're using bok choy or spinach, add it to the skillet and sauté for about 1-2 minutes until wilted.

Combine Noodles and Sauce: Add the drained udon noodles to the skillet. Toss everything together to ensure the noodles are well coated with the spicy sauce. Cook for an additional minute to warm through.

Serve: Transfer the noodles to serving bowls, sprinkle with sliced green onions, sesame seeds, and season with salt and pepper to taste. Enjoy hot!
