8 oz (225g) spaghetti or your favorite pasta

2 tablespoons olive oil

3 cloves garlic, minced

4 cups fresh spinach, washed and roughly chopped

Zest of 1 lemon

Juice of 1 lemon

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

1/4 cup grated Parmesan cheese (plus more for serving)

Fresh basil leaves for garnish (optional)

Cook the Pasta: In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté Garlic: In a large skillet over medium heat, heat the olive oil. Add the minced garlic and cook until fragrant, about 1 minute, being careful not to burn it.

      Add Spinach: Stir in the chopped spinach and sauté for about 2-3 minutes, until wilted.
