Apple Fritter Bites

Easy to make in just 30 minutes, this recipe combines simple ingredients and results in warm, crispy bites dusted with powdered sugar. 2 medium-sized apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1 cup all-purpose flour

2 tablespoons granulated sugar

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup milk

1 large egg

1 teaspoon vanilla extract

Oil, for frying

Powdered sugar, for dusting

Instructions
 

In a large bowl, combine the diced apples with 1 tablespoon of granulated sugar and a sprinkle of ground cinnamon. Set aside to let the apples macerate for about 10 minutes.

    In another bowl, whisk together flour, baking powder, remaining granulated sugar, ground cinnamon, and salt until well combined.

      In a separate bowl, mix the milk, egg, and vanilla extract together. Gradually add the wet ingredients to the dry mixture, stirring until just combined. Be careful not to overmix; a few lumps are okay.

        Gently fold in the macerated apples into the batter until evenly distributed.

          In a large, heavy-bottomed pot, heat oil to 350°F (175°C). Use enough oil for deep-frying; about 2 inches deep is ideal.

            Once the oil is ready, use a small cookie scoop or spoon to drop bites of the batter into the hot oil. Fry in batches, without overcrowding the pot, for about 2-3 minutes on each side or until golden brown.

              Using a slotted spoon, transfer the fritter bites to a paper towel-lined plate to drain excess oil.

                While still warm, dust the fritter bites generously with powdered sugar.
