For the Asado Chicken:

4 chicken thighs (bone-in, skin-on)

1/4 cup olive oil

4 cloves garlic, minced

2 teaspoons smoked paprika

1 teaspoon ground cumin

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

Juice and zest of 1 lemon

1/4 cup fresh cilantro, chopped (for garnish)

For the Sautéed Lemon Zucchini:

2 medium zucchini, sliced into half-moons

1 tablespoon olive oil

1 clove garlic, minced

Juice of 1/2 lemon

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken:

    - In a large bowl, whisk together the olive oil, minced garlic, smoked paprika, cumin, oregano, salt, pepper, lemon juice, and lemon zest.

      - Add the chicken thighs to the marinade, ensuring they are well coated. Cover and let it marinate in the refrigerator for at least 30 minutes (or up to overnight for maximum flavor).

        Cook the Asado Chicken:

          - Preheat your grill or oven to 425°F (220°C).

            - If grilling, place the marinated chicken thighs, skin side down, on the grill. Cook for about 6-8 minutes per side or until the internal temperature reaches 165°F (75°C) and the skin is crispy.

              - If baking, place the chicken in a baking dish, skin side up, and bake for 35-40 minutes or until cooked through and golden.

                Prepare the Sautéed Lemon Zucchini:

                  - In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

                    - Add the sliced zucchini and cook for 5-7 minutes, stirring occasionally, until tender but still slightly crisp.

                      - Squeeze the lemon juice over the zucchini and season with salt and pepper. Remove from heat and garnish with chopped parsley.

                        Serve:

                          - Plate the Asado Chicken alongside the Sautéed Lemon Zucchini. Garnish the chicken with chopped cilantro. Enjoy your vibrant and flavorful meal!
