For the Dumplings:

1 cup all-purpose flour

1/2 cup water

1/2 pound ground pork

1/4 cup chopped green onions

1 tablespoon soy sauce

1 teaspoon sesame oil

1 teaspoon ginger, minced

1/2 teaspoon garlic, minced

Salt and pepper to taste

For the Soup:

4 cups chicken or vegetable broth

1 tablespoon soy sauce

1 tablespoon chili paste (adjust to taste)

2 cloves garlic, minced

1 inch ginger, sliced

1 cup bok choy, chopped

1/2 cup mushrooms, sliced

1 tablespoon fish sauce (optional)

Fresh cilantro for garnish

Make the Dumpling Dough: In a bowl, combine the flour and water to form a smooth dough. Knead for about 5 minutes until elastic. Cover with a damp cloth and let it rest for 30 minutes.

    Prepare the Filling: In a separate bowl, mix together the ground pork, green onions, soy sauce, sesame oil, ginger, garlic, salt, and pepper. Make sure everything is well combined.

      Form the Dumplings: On a lightly floured surface, roll out the dough to about 1/8 inch thickness. Cut into circles with a cookie cutter or a glass (approximately 3 inches in diameter). Place a teaspoon of the filling in the center of each circle, fold in half, and pinch the edges to seal.

        Cook the Dumplings: Bring a large pot of salted water to a boil. Carefully drop in the dumplings and cook for about 5 to 7 minutes or until they float to the top. Remove and set aside.

          Prepare the Soup: In a large pot, heat a tablespoon of oil over medium heat. Add the minced garlic and sliced ginger; sauté until fragrant. Pour in the broth, soy sauce, and chili paste. Bring to a boil.

            Add the Vegetables: Add the bok choy and mushrooms to the broth. Let it simmer for about 5 minutes until the vegetables are tender.

              Add the Dumplings: Gently add the boiled dumplings to the soup and simmer for an additional 2-3 minutes to heat them through.

                Serve: Ladle the soup into bowls, garnish with fresh cilantro, and serve hot.
