Ingredients
  

1 lb boneless, skinless chicken thighs

1 cup cooked jasmine rice

1 cup broccoli florets

1/2 cup shredded carrots

1/2 cup snap peas

1/4 cup green onions, chopped

2 tbsp sesame oil

Salt and pepper, to taste

1/2 cup mayonnaise

2 tbsp sweet chili sauce

1 tbsp sriracha (adjust to taste)

1 tsp rice vinegar

1 tbsp sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken thighs with sesame oil, salt, and pepper. Let it marinate for at least 30 minutes.

    Cook the Chicken: Heat a skillet over medium-high heat. Add the marinated chicken and cook for about 6-7 minutes on each side or until golden brown and cooked through. Remove from heat and let it rest before slicing into bite-sized pieces.

      Blanch the Vegetables: In a pot of boiling water, blanch the broccoli florets, snap peas, and shredded carrots for 2-3 minutes until vibrant and tender-crisp. Drain and rinse them under cold water to stop the cooking process.

        Prepare the Bang Bang Sauce: In a mixing bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and rice vinegar until smooth.
