Bang Bang Chicken Bowl

Ingredients
  

1 lb chicken breast, diced

1 cup cooked jasmine rice

1 cup broccoli florets

1/2 cup carrots, thinly sliced

1/2 red bell pepper, thinly sliced

1/4 cup green onions, chopped

1/4 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 teaspoon garlic powder

1 teaspoon ginger powder

Salt and pepper, to taste

Sesame seeds for garnish

Instructions
 

In a medium bowl, mix together the mayonnaise, sweet chili sauce, sriracha, soy sauce, rice vinegar, garlic powder, ginger powder, salt, and pepper to create the Bang Bang sauce. Adjust the spiciness as needed by adding more sriracha. Set aside.

    In a large skillet over medium heat, lightly spray with cooking oil. Add the diced chicken breast and season with salt and pepper. Cook for about 5-7 minutes, until the chicken is golden brown and cooked through.

      While the chicken cooks, steam the broccoli and carrots until just tender, about 3-4 minutes. Add the red bell pepper to the skillet with the chicken and cook for an additional 2 minutes until slightly softened.

        Once the chicken and veggies are cooked, remove from heat and pour half of the Bang Bang sauce over the chicken mixture. Stir well to coat.

          To assemble the bowls, place a scoop of jasmine rice at the bottom of each bowl, followed by the Bang Bang chicken and vegetable mixture. Drizzle additional Bang Bang sauce on top if desired.

            Garnish with chopped green onions and sesame seeds. Enjoy immediately!
