Bang Bang Chicken Bowls

Served on a bed of fluffy jasmine rice and topped with vibrant broccoli, bell peppers, cucumbers, and creamy avocado, this dish is not only delicious but also colorful and healthy. Ingredients
  

1 lb (450g) boneless, skinless chicken thighs

1 tablespoon cornstarch

2 tablespoons oil (vegetable or sesame)

Salt and pepper, to taste

1 cup cooked jasmine rice

1 cup broccoli florets

1 red bell pepper, sliced

1 cucumber, thinly sliced

1 avocado, sliced

1/4 cup green onions, chopped

1 tablespoon sesame seeds (optional)

Bang Bang Sauce:

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon garlic powder

1 teaspoon lime juice

Prepare the Chicken: Pat the chicken thighs dry with paper towels. Season with salt and pepper and sprinkle evenly with cornstarch.

    Cook the Chicken: Heat the oil in a large skillet over medium-high heat. Add the chicken pieces and cook for 5-7 minutes on each side, or until golden brown and fully cooked. Remove from the skillet and let rest for a few minutes before slicing into bite-sized pieces.

      Blanch the Vegetables: In a pot of boiling water, blench the broccoli florets for about 2-3 minutes until vibrant green. Transfer to an ice bath (bowl of cold water with ice) to stop cooking, then drain and set aside.

        Make the Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, garlic powder, and lime juice. Stir until well mixed.

          Assemble the Bowls: In serving bowls, add a scoop of jasmine rice as the base. Arrange the sliced chicken, blanched broccoli, red bell pepper, cucumber slices, and avocado beautifully on top.

            Drizzle the Sauce: Drizzle a generous amount of the Bang Bang sauce over the assembled ingredients and sprinkle with chopped green onions and sesame seeds for garnish.
