Bang Bang Chicken Bowls

1 lb (450g) boneless, skinless chicken thighs

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

1 tsp garlic powder

1 tsp onion powder

Salt and pepper, to taste

1 cup cooked rice (jasmine or brown)

2 cups mixed greens (spinach, arugula, or kale)

1/2 cup shredded carrots

1/2 cup sliced cucumbers

1 avocado, sliced

1/4 cup green onions, chopped

1/4 cup cilantro, chopped

1/2 cup Bang Bang Sauce (see recipe below)

Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tsp Sriracha (or more to taste)

1 tsp lime juice

Instructions
 

Prepare the Bang Bang Sauce: In a small bowl, mix together mayonnaise, sweet chili sauce, Sriracha, and lime juice. Adjust the heat level by adding more Sriracha if desired. Refrigerate until ready to use.

    Prep the Chicken: Preheat your oven to 425°F (220°C). Pat the chicken thighs dry with paper towels, and then season with garlic powder, onion powder, salt, and pepper on both sides.

      Bread the Chicken: Set up a breading station with three shallow bowls. In the first bowl, add the flour. In the second bowl, pour the beaten eggs. In the third bowl, place the panko breadcrumbs. Coat each chicken thigh first in flour, then dip into the egg, and finally coat in panko, pressing the crumbs to adhere.

        Bake the Chicken: Place the breaded chicken on a parchment-lined baking sheet. Bake in the preheated oven for 20-25 minutes, or until golden brown and cooked through (internal temperature should reach 165°F / 74°C).

          Assemble the Bowls: While the chicken is baking, cook your rice according to package instructions. In a bowl, layer a scoop of rice, followed by mixed greens. Top with shredded carrots, cucumber slices, and avocado.

            Slice the Chicken: Once the chicken is cooked, allow it to rest for a few minutes, then slice it into strips.

              Finish the Bowl: Place the sliced chicken on top of the rice and greens. Drizzle generously with Bang Bang Sauce, and garnish with chopped green onions and cilantro.

                Serve: Enjoy your Bang Bang Chicken Bowl immediately while warm!
