1 lb boneless, skinless chicken thighs

1 cup cornstarch

1 tsp salt

1 tsp black pepper

1/2 tsp garlic powder

1/2 tsp paprika

1 cup buttermilk

Vegetable oil, for frying

2 cups cooked jasmine rice (or rice of choice)

1 cup shredded red cabbage

1 cup diced cucumber

1/2 cup sliced green onions

1 avocado, sliced

Sesame seeds, for garnish

Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp Sriracha (adjust to taste)

1 tsp lime juice

Prepare the Chicken: In a bowl, mix cornstarch, salt, pepper, garlic powder, and paprika. In another bowl, immerse the chicken thighs in buttermilk for at least 30 minutes to tenderize.

    Coat the Chicken: After marinating, remove the chicken from buttermilk and let excess liquid drip. Now coat each piece in the cornstarch mixture, ensuring each piece is fully covered.

      Fry the Chicken: Heat vegetable oil in a deep skillet or frying pan over medium-high heat. Once hot, fry the chicken pieces in batches for about 6-8 minutes per side or until golden brown and cooked through. Remove and drain on paper towels.

        Make the Bang Bang Sauce: In a small bowl, mix together mayonnaise, sweet chili sauce, Sriracha, and lime juice until well combined. Taste and adjust seasoning if needed.

          Assemble the Bowls: In serving bowls, layer cooked jasmine rice as the base. Top with fried chicken pieces, shredded red cabbage, diced cucumber, sliced green onions, and avocado.
