1 lb beef sirloin, thinly sliced against the grain

2 tablespoons oyster sauce

1 tablespoon soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

3 cloves garlic, minced

1 inch ginger, grated

1 bell pepper (any color), sliced

1 cup snow peas

1 tablespoon rice vinegar

1 teaspoon sesame oil

Salt and pepper to taste

Cooked jasmine rice, for serving

Sliced green onions, for garnish

Instructions
 

Marinate the Beef: In a medium bowl, combine the thinly sliced beef with oyster sauce, soy sauce, cornstarch, and a pinch of salt and pepper. Mix well and let marinate for at least 15 minutes (or up to 1 hour in the refrigerator).

    Prepare the Stir-Fry Sauce: In a small bowl, mix together rice vinegar, sesame oil, and a bit more oyster sauce (adjust to taste). Set aside.

      Cook the Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Once hot, add the marinated beef in batches to avoid overcrowding the pan. Stir-fry for about 2-3 minutes until browned and just cooked through. Remove the beef from the skillet and set aside.

        Sauté the Aromatics: In the same skillet, add another tablespoon of vegetable oil. Add minced garlic and grated ginger, and sauté for about 30 seconds until fragrant.

          Add Vegetables: Toss in the sliced bell peppers and snow peas. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
