1 cup all-purpose flour

1/4 cup water

1 tsp salt

1/2 tsp baking powder

1/2 cup finely chopped scallions

1 cup cooked and shredded chicken (or tofu for a vegetarian option)

2 tbsp vegetable oil

1 onion, finely chopped

3 garlic cloves, minced

1 tbsp ginger, grated

2 tbsp curry powder

1 tsp turmeric powder

1 can (14 oz) coconut milk

4 cups vegetable or chicken broth

2 cups mixed vegetables (carrots, bell peppers, peas)

Salt and pepper, to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Make the Dumpling Dough: In a bowl, combine the flour, salt, and baking powder. Gradually add water until a soft dough forms. Knead gently for 2-3 minutes. Cover and let it rest for 30 minutes.

    Prepare the Filling: In a large bowl, mix together the chopped scallions and shredded chicken (or tofu). Season with salt and pepper. Set aside.

      Shape the Dumplings: On a floured surface, roll out the dough to about 1/8 inch thick. Cut out circles (about 3 inches in diameter). Place a small spoonful of the filling in the center of each circle. Fold and pinch the edges to seal the dumplings. Repeat for all circles.

        Make the Soup Base: In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes). Stir in the minced garlic and grated ginger, and cook for another 1-2 minutes until fragrant.
