12 oz spaghetti or fettuccine

2 large chicken breasts, sliced into strips

4 oz pancetta or bacon, diced

3 large eggs

1 cup grated Parmesan cheese

3 cloves garlic, minced

1 cup heavy cream

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Freshly cracked black pepper (for serving)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti (or fettuccine) according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the remainder.

    Prepare the Chicken: While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season the sliced chicken breasts with salt and pepper. Add them to the skillet and cook for about 5-7 minutes until golden brown and cooked through. Remove and set aside.

      Cook the Pancetta: In the same skillet, add the diced pancetta (or bacon). Cook for about 3-4 minutes until crispy. Then, add the minced garlic and cook for an additional minute until fragrant.

        Combine Ingredients: In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and heavy cream. Add salt and pepper to taste.

          Toss Together: Add the cooked pasta to the skillet with the pancetta and garlic. Remove the skillet from heat, then pour the egg and cheese mixture over the hot pasta. Quickly toss everything together to coat the pasta. The residual heat will cook the eggs and create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time to reach desired consistency.

            Add Chicken: Gently fold the cooked chicken back into the pasta.
