Best Hawaiian Banana Bread with Pineapple and Coconut

3 ripe bananas, mashed

1 cup crushed pineapple, drained

1/2 cup shredded coconut (unsweetened)

1/2 cup brown sugar

1/2 cup granulated sugar

1/2 cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1 1/2 cups all-purpose flour

1/2 teaspoon cinnamon (optional)

1/2 cup chopped walnuts or pecans (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.

    Mix Wet Ingredients: In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Mix until well combined. Add the mashed bananas, crushed pineapple, eggs, and vanilla extract. Stir until smooth.

      Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon (if using).

        Add Dry to Wet: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix. Fold in the shredded coconut and nuts if desired.

          Pour Batter into Pan: Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

            Bake: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

              Cool the Bread: Once baked, remove the banana bread from the oven and allow it to cool in the pan for about 10 minutes. Then, remove it from the pan and transfer it to a wire rack to cool completely.
