Broccoli Cheese Soup Recipe

1 pound fresh broccoli florets

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

2 cups sharp cheddar cheese, grated

1 teaspoon Dijon mustard

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika (optional)

Croutons for garnish (optional)

Fresh parsley for garnish (optional)

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

    Cook the Broccoli: Add the broccoli florets to the pot and pour in the vegetable broth. Bring the mixture to a boil, then reduce heat to a simmer. Cover and cook for 10-15 minutes, or until the broccoli is fork-tender.

      Blend the Soup: Once the broccoli is cooked, use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a countertop blender, taking care to let it cool slightly before blending. Return the pureed soup to the pot.

        Add Cream and Cheese: Stir in the heavy cream, grated sharp cheddar cheese, Dijon mustard, salt, black pepper, and paprika (if using). Heat the soup over low-medium heat until the cheese is melted and the soup is heated through. Do not boil.
