2 boneless, skinless chicken breasts

12 oz penne pasta

1 pint cherry tomatoes, halved

1 cup fresh basil, chopped

2 cloves garlic, minced

1/4 cup balsamic vinegar

1/4 cup olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup grated Parmesan cheese

Optional: red pepper flakes for a kick

Cook the Pasta: Start by boiling a large pot of salted water. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Prepare the Chicken: While the pasta cooks, season the chicken breasts with salt and pepper. Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil. Once hot, add the chicken and cook for about 6-7 minutes on each side, or until cooked through and golden brown. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.

      Make the Bruschetta Topping: In the same skillet, reduce the heat to medium and add the remaining olive oil. Sauté the minced garlic for about 30 seconds until fragrant. Then, add the halved cherry tomatoes, balsamic vinegar, and season with salt and black pepper. Cook for 3-4 minutes, or until the tomatoes start to soften and release their juices.

        Combine Everything: Add the cooked pasta to the skillet with the tomato mixture. Toss to combine. If the pasta seems dry, gradually add some reserved pasta water until desired consistency is reached.

          Add Chicken and Basil: Gently fold in the sliced chicken and chopped basil. Cook for another minute to ensure everything is warmed through.
