Ingredients

2 large carrots, grated

1 medium apple, cored and finely chopped (preferably a tart variety like Granny Smith)

1/4 cup raisins or dried cranberries

1/4 cup walnuts, chopped (optional)

2 tablespoons honey or maple syrup

1 tablespoon lemon juice

1/4 teaspoon cinnamon (optional)

Salt and pepper to taste

Fresh parsley or mint for garnish

Instructions

In a large mixing bowl, combine the grated carrots and chopped apple.

Add the raisins or dried cranberries and chopped walnuts (if using) to the bowl.

In a separate small bowl, whisk together the honey (or maple syrup), lemon juice, cinnamon (if using), and a pinch of salt and pepper.

Pour the dressing over the carrot and apple mixture, tossing gently to ensure everything is well coated.

Taste the salad and adjust the seasoning if necessary, adding more honey for sweetness or lemon juice for tanginess.

Let the salad sit for about 10 minutes to allow flavors to meld, then give it another gentle toss.

Garnish with fresh parsley or mint before serving.
