1 cup rolled oats

2 cups almond milk (or milk of choice)

1 medium carrot, finely grated

1/4 cup dried cranberries or raisins

1/4 cup chopped walnuts (optional)

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon nutmeg

2 tablespoons maple syrup or honey (to taste)

1/2 teaspoon vanilla extract

Pinch of salt

Cream cheese or yogurt (for serving, optional)

Extra walnuts and shredded coconut (for topping, optional)

Instructions
 

In a medium saucepan, combine the rolled oats, almond milk, grated carrot, cranberries or raisins, ground cinnamon, ground ginger, nutmeg, maple syrup (or honey), vanilla extract, and a pinch of salt.

    Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally.

      Continue to cook for about 5-7 minutes, or until the oats are tender and the mixture has thickened to your desired consistency.

        Once cooked, remove from heat and stir in the chopped walnuts if using.

          Serve the oatmeal warm in bowls, topped with a dollop of cream cheese or yogurt, and sprinkle extra walnuts and shredded coconut on top if desired.
