Ingredients
  

1 pound of bacon, chopped

4 large russet potatoes, peeled and diced

1 small onion, diced

1 red bell pepper, diced

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

8 large eggs

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 tablespoons fresh chives, chopped (optional for garnish)

Instructions
 

Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.

    In a large skillet over medium heat, cook the chopped bacon until crispy. Remove with a slotted spoon and drain on paper towels, leaving a little bacon grease in the pan.

      In the same pan, add the diced potatoes and cook for about 10 minutes, stirring occasionally, until they start to become tender. Add the diced onion and bell pepper, and sauté for another 5-7 minutes until onions are translucent and potatoes are cooked through.

        In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper.

          Layer half of the cooked potato mixture in the greased baking dish. Sprinkle half of the bacon on top, followed by half of the cheddar and mozzarella cheeses. Repeat the layers with the remaining potato mixture, bacon, and cheese.

            Pour the egg mixture evenly over the layered casserole. Use a fork to gently press down so the egg mixture seeps into the layers.

              Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the top is golden and bubbly.

                Remove from the oven and let it cool for about 5 minutes. Garnish with fresh chives if desired, then slice and serve warm.
