1 lb ground beef

1 cup cooked rice (white or brown)

1 cup refried beans

1 cup shredded cheddar cheese

1/2 cup diced onions

2 cloves garlic, minced

1 tablespoon taco seasoning

4 large flour tortillas

1/4 cup fresh cilantro, chopped (optional)

Salt and pepper to taste

For the Crispy Fries:

4 large russet potatoes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley for garnish (optional)

Prepare the Fries: Preheat your oven to 425°F (220°C). Wash and peel the potatoes, then cut them into thin fry-shaped pieces. In a bowl, toss the fries with olive oil, garlic powder, paprika, salt, and pepper. Spread them evenly on a baking sheet and bake for 25-30 minutes, flipping halfway through, until they are golden brown and crispy.

    Cook the Beef Filling: In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spatula. Drain any excess fat, and then add the diced onions and minced garlic. Sauté until the onions are translucent.

      Season the Beef: Stir in the taco seasoning, cooked rice, and refried beans. Mix thoroughly, season with salt and pepper, and allow to heat through for about 5 minutes. Remove from heat.

        Assemble the Burritos: Lay a tortilla flat on a clean surface. Spoon a generous portion of the beef mixture onto the center, followed by a sprinkle of shredded cheddar cheese and chopped cilantro if desired. Fold the sides of the tortilla inwards and then roll from the bottom up to secure the filling inside. Repeat with the remaining tortillas.

          Toast the Burritos: In a clean skillet (you can use the same one), add a little oil and heat over medium. Place the burritos seam-side down into the skillet and toast for 3-4 minutes on each side, or until they’re golden brown and the cheese has melted.

            Serve: Serve the cheesy beef burritos hot with the crispy fries on the side. Optionally, garnish with fresh parsley and serve with salsa or sour cream for dipping.
