Ingredients

2 boneless, skinless chicken breasts

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

4 large flour tortillas

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup baby spinach leaves

1/2 cup diced tomatoes

1/4 cup chopped fresh basil (optional)

1/4 teaspoon red pepper flakes (optional)

Instructions

Prepare the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

Cook the Chicken: Add the chicken to the skillet and cook for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the skillet, let it rest for a few minutes, and then slice into thin strips.

Assemble the Wraps: Lay out the flour tortillas on a clean surface. In the center of each tortilla, place a handful of baby spinach, sliced chicken, diced tomatoes, and a generous sprinkle of mozzarella and Parmesan cheese.

Roll the Wraps: Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top. Secure with a toothpick if necessary.

Grill the Wraps: Wipe the skillet clean, and heat it over medium heat. Place the wraps seam-side down in the skillet. Grill for about 2-3 minutes on each side or until the tortilla is crispy and the cheese is melted.

Serve: Cut the wraps in half and serve warm, garnished with fresh basil and a sprinkle of red pepper flakes if desired. Enjoy!
