Cheesy Garlic Chicken Wraps

2 large boneless, skinless chicken breasts

1 cup shredded mozzarella cheese

1/2 cup cream cheese, softened

3 cloves garlic, minced

1 tsp garlic powder

1 tsp paprika

1 tsp dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

4 large flour tortillas

2 cups fresh spinach

1/2 cup diced tomatoes

Olive oil for cooking

Fresh parsley for garnish (optional)

Instructions
 

Prepare the Chicken: Season the chicken breasts with salt, pepper, garlic powder, and paprika.

    Cook the Chicken: In a large skillet, heat 1 tbsp of olive oil over medium heat. Add the seasoned chicken breasts and cook for 6-7 minutes on each side until cooked through and juices run clear. Remove from the heat and let it rest for a few minutes. Once rested, shred the chicken with two forks.

      Make the Cheese Mixture: In a mixing bowl, combine the shredded chicken, softened cream cheese, mozzarella cheese, minced garlic, and dried Italian herbs. Mix until well combined.

        Assemble the Wraps: Warm the flour tortillas in a dry skillet for about 30 seconds on each side or until pliable. Place a generous portion of the cheese and chicken mixture in the center of each tortilla. Add a handful of fresh spinach and diced tomatoes on top.

          Wrap it Up: Fold in the sides of the tortilla, then roll it up tightly from the bottom to the top, ensuring all ingredients are enclosed.

            Toast the Wraps: In the same skillet, add a bit more olive oil and arrange the wraps seam-side down in the skillet. Toast each wrap for 2-3 minutes on each side until golden and crispy.

              Serve: Remove from the skillet, let cool slightly, and slice each wrap in half. Garnish with fresh parsley if desired and serve hot.
