Cheesy Masala Beans on Toast

1 can (400g) kidney beans, drained and rinsed

1 medium onion, finely chopped

2 cloves garlic, minced

1 green chili, finely chopped (adjust for spice preference)

1 tsp ginger, grated

1 tsp cumin seeds

1 tsp garam masala

1 tsp smoked paprika

Salt and pepper to taste

½ cup tomato sauce (or chopped tomatoes)

1 cup shredded cheese (cheddar or mozzarella)

4 slices of whole grain or sourdough bread

2 tbsp olive oil

Fresh cilantro, chopped for garnish

Instructions
 

In a large skillet, heat olive oil over medium heat. Add the cumin seeds and allow them to toast for about 30 seconds until fragrant.

    Add the chopped onion, garlic, and ginger. Sauté until the onion becomes translucent, about 5 minutes.

      Stir in the green chili, garam masala, smoked paprika, salt, and pepper. Cook for another minute to meld the flavors.

        Add the rinsed kidney beans and tomato sauce. Stir well and let the mixture simmer for about 10 minutes, allowing the flavors to combine and the sauce to thicken. If it's too thick, add a little water to reach your desired consistency.

          Preheat your broiler in preparation for the cheese topping.

            Toast the bread slices until they're golden brown.

              Once the bean mixture is ready, stir in half of the shredded cheese to melt into the mixture.

                Spoon the cheesy masala beans generously over each slice of toasted bread.

                  Top with the remaining shredded cheese and place under the broiler for about 2-3 minutes, or until the cheese is bubbly and golden brown.

                    Remove from the oven, sprinkle with fresh cilantro, and serve immediately while hot.
