1 lb ground beef (or turkey for a lighter option)

1 packet taco seasoning

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 package of puff pastry (2 sheets), thawed

1 small onion, finely chopped

1 bell pepper (any color), diced

1 jalapeño, finely chopped (optional for heat)

1 egg (beaten, for egg wash)

1 tablespoon olive oil

Fresh cilantro, chopped (for garnish)

Salsa and sour cream (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Cook the Filling: In a large skillet, heat olive oil over medium heat. Add the chopped onion and bell pepper, sautéing until soft (about 3-4 minutes). Add the ground beef (or turkey) and cook until browned. Drain any excess fat.

      Add Seasoning: Sprinkle the taco seasoning over the meat mixture, adding a few tablespoons of water if necessary to help the spices adhere. Stir in the jalapeño (if using) and cook for an additional 3-4 minutes. Remove from heat and let it cool slightly.

        Mix in Cheese: Once cooled, stir in both shredded cheddar and mozzarella cheeses with the meat mixture until well combined.

          Prepare the Puff Pastry: Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into rectangles, approximately 4 inches by 6 inches.

            Fill and Fold: Place a generous spoonful of the meat and cheese mixture in the center of each rectangle. Fold over the pastry to create a pocket, sealing the edges by pressing down with a fork to ensure no filling escapes.

              Egg Wash: Brush the tops of each taco stick with the beaten egg for a golden finish.

                Bake: Arrange the filled taco sticks on the prepared baking sheet. Bake in the preheated oven for 15-20 minutes, or until golden brown and puffed up.

                  Serve: Remove from the oven and let cool slightly. Garnish with fresh cilantro. Serve warm with salsa and sour cream for dipping.
