2 boneless, skinless chicken breasts

1 ripe avocado, mashed

1 cup shredded cheddar cheese

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt & pepper to taste

4 slices of whole grain bread

½ cup fresh spinach or mixed greens

1 small tomato, sliced

1 tablespoon mayonnaise (optional)

Butter for toasting

Cook the Chicken: Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper. Heat olive oil in a skillet over medium heat and cook the chicken for about 6-7 minutes per side or until fully cooked. Remove from heat and let cool slightly before shredding.

    Prepare the Avocado Spread: In a bowl, mash the ripe avocado and season with salt and pepper to taste. If desired, add a little lime juice for extra flavor.

      Assemble the Sandwich: On a slice of whole grain bread, spread a layer of mayonnaise (if using). Next, layer the shredded chicken, followed by a portion of the mashed avocado, sliced tomato, cheddar cheese, and a handful of fresh spinach.
