Chicken Ramen Stir Fry (30 minutes)

2 packs of instant ramen noodles (discard the seasoning packets)

1 lb (450g) boneless chicken breast, thinly sliced

1 cup broccoli florets

1 cup bell peppers, sliced (any color)

1 cup snap peas

2 cloves garlic, minced

1 tablespoon ginger, grated

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon sesame oil

2 tablespoons vegetable oil

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Cook the Ramen Noodles: In a large pot of boiling water, cook the ramen noodles according to package instructions until al dente. Drain and set aside. Drizzle a bit of sesame oil over the noodles to prevent sticking.

    Prepare the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the sliced chicken and season with a pinch of salt and pepper. Stir-fry for about 5-7 minutes until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Stir Fry the Vegetables: In the same skillet, add the remaining 1 tablespoon of vegetable oil. Then add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant. Add the broccoli, bell peppers, and snap peas. Stir-fry the vegetables for about 4-5 minutes until they are tender but still crunchy.

        Combine Ingredients: Return the cooked chicken to the skillet along with the drained ramen noodles. Pour the soy sauce, oyster sauce, and remaining sesame oil over the mixture. Toss everything together gently for another 2-3 minutes until heated through and well combined.

          Garnish and Serve: Remove from heat and serve immediately, garnishing with chopped green onions and a sprinkle of sesame seeds.
