1 lb ground chicken

1/4 cup finely chopped fresh parsley

1 tablespoon lemon zest

2 tablespoons lemon juice

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil (for cooking)

In a large mixing bowl, combine the ground chicken, parsley, lemon zest, lemon juice, minced garlic, thyme, oregano, smoked paprika, salt, and black pepper.

    Using your hands, mix the ingredients until well combined, being careful not to overwork the chicken.

      Once mixed, form the mixture into 6-8 sausage shapes (about 4 inches long each).

        Heat olive oil in a skillet over medium heat. Once hot, add the sausages to the skillet.

          Cook the sausages for about 5-6 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F).
