1 pound elbow macaroni

1 pound ground beef (or turkey)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (28 oz) crushed tomatoes

1 packet chili seasoning (or 2 tbsp homemade chili spice mix)

1 cup beef broth (or water)

1 cup shredded cheddar cheese (plus extra for topping)

1 medium onion, diced

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon cumin

Salt and pepper to taste

Fresh cilantro or green onions for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Aromatics: In the same pot, heat olive oil over medium heat. Add diced onions and cook until translucent (about 3-4 minutes). Stir in the minced garlic and cook for an additional minute until fragrant.

      Brown the Meat: Add the ground beef (or turkey) to the pot. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.

        Add the Beans and Tomatoes: Stir in the kidney beans, black beans, crushed tomatoes, beef broth, chili seasoning, and cumin. Simmer for 10-15 minutes, allowing the flavors to meld. Stir occasionally.

          Combine with Pasta: Add the cooked macaroni to the chili mixture. Stir well to combine and coat the pasta evenly with the sauce. Season with salt and pepper to taste.

            Melt the Cheese: Reduce heat to low. Mix in the shredded cheddar cheese until melted and combined.
