Chinese Beef and Broccoli

Ingredients
  

1 lb flank steak, thinly sliced against the grain

2 cups broccoli florets

1 cup carrots, thinly sliced

2 tablespoons vegetable oil

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

1/2 cup beef broth

1 teaspoon sesame oil

1 tablespoon rice vinegar

1 tablespoon sugar

Salt and black pepper, to taste

Cooked rice, for serving

Sesame seeds, for garnish

Instructions
 

Marinate the Beef: In a medium bowl, combine the sliced beef, soy sauce, cornstarch, and a pinch of black pepper. Mix well and let it marinate for at least 20 minutes.

    Prepare the Sauce: In another bowl, whisk together the oyster sauce, beef broth, sesame oil, rice vinegar, and sugar. Set aside.

      Blanch Broccoli: Bring a pot of water to a boil. Add the broccoli florets and cook for about 2 minutes until bright green and slightly tender. Quickly drain and rinse them under cold water to stop the cooking process. Set aside.

        Stir-Fry the Beef: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the marinaded beef and sauté until browned and cooked through, about 3-4 minutes. Remove and set aside.

          Sauté Veggies: In the same skillet, add the minced garlic and ginger, cooking until fragrant (about 30 seconds). Then add the carrots and blanched broccoli. Stir-fry for 2-3 minutes until the veggies are heated through.

            Combine and Cook: Return the cooked beef to the skillet with the veggies. Pour the sauce over the beef and vegetables, stirring to combine. Cook for an additional 2-3 minutes until the sauce thickens and coats everything nicely.

              Serve: Taste and adjust the seasoning if needed. Serve hot over cooked rice and garnish with sesame seeds.
