CILANTRO LIME CHICKEN THIGHS

6 bone-in, skin-on chicken thighs

1/4 cup fresh lime juice (about 2-3 limes)

1/3 cup fresh cilantro, finely chopped

4 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon paprika

Salt and black pepper to taste

Zest of 1 lime

Optional: Lime wedges and additional cilantro for garnish

In a large bowl, whisk together lime juice, chopped cilantro, minced garlic, olive oil, cumin, chili powder, paprika, lime zest, salt, and black pepper to create the marinade.

    Add the chicken thighs to the bowl, ensuring they are well-coated in the marinade. Cover and refrigerate for at least 1 hour, or ideally overnight for maximum flavor.

      Preheat your grill or oven to 400°F (200°C). If using a grill, lightly oil the grates to prevent sticking.

        Remove the chicken from the marinade and let it sit at room temperature for about 15 minutes.

          Place the chicken thighs skin-side down on the grill, cooking for about 6-8 minutes until they have nice grill marks. Flip and continue cooking for another 6-8 minutes on the other side, or until the internal temperature reaches 165°F (75°C).

            If cooking in the oven, place chicken thighs skin-side up on a baking sheet lined with foil. Bake for about 35-40 minutes or until cooked through and the skin is crispy.

              Once cooked, let the chicken rest for 5 minutes before serving to lock in the juices.

                Serve hot, garnished with lime wedges and extra cilantro if desired.
