Cinnamon Sugar French Toast Muffins

6 cups of day-old bread (such as brioche, challah, or white bread), cubed

4 large eggs

1 cup whole milk

½ cup heavy cream

½ cup granulated sugar

2 teaspoons vanilla extract

1 tablespoon ground cinnamon

¼ teaspoon nutmeg (optional)

⅓ cup unsalted butter, melted

¾ cup brown sugar

1 tablespoon granulated sugar (for sprinkling)

Additional ground cinnamon (for sprinkling)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a muffin pan with non-stick spray or butter.

    Prepare the Bread: In a large mixing bowl, combine the cubed bread. If using fresh bread, toast the cubes lightly in the oven for 5-7 minutes until just golden.

      Mix Wet Ingredients: In another bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, and nutmeg until well combined.

        Combine: Pour the wet mixture over the bread cubes. Gently stir to ensure all the bread is soaked. Let it sit for about 10-15 minutes to absorb the moisture.

          Melt Butter and Sugar Mixture: In a separate small bowl, mix the melted butter with brown sugar until smooth.

            Fill Muffin Pan: Spoon the soaked bread mixture into the prepared muffin pan, filling each cup about ¾ full. Drizzle the butter and brown sugar mixture over the top of each muffin.

              Sprinkle Cinnamon Sugar: In a small bowl, combine the granulated sugar with a sprinkle of ground cinnamon. Dust this cinnamon sugar mixture over the top of the muffins.

                Bake: Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and puffed up.

                  Cool and Serve: Allow the muffins to cool in the pan for about 5 minutes before transferring to a wire rack. Serve warm, optionally garnished with maple syrup, whipped cream, or fresh fruit.
