Creamy Cajun Chicken Pasta

8 oz fettuccine or your preferred pasta

2 tablespoons olive oil

1 lb chicken breast, thinly sliced

2 teaspoons Cajun seasoning

1 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 cup heavy cream

1 cup chicken broth

1 cup diced tomatoes (canned or fresh)

1 cup grated Parmesan cheese

1 cup spinach leaves

1/4 cup chopped green onions (for garnish)

Fresh parsley (optional, for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the sliced chicken to the skillet, and sprinkle with Cajun seasoning, paprika, garlic powder, onion powder, salt, and pepper. Sauté for 5-7 minutes, or until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.

      Make the Sauce: In the same skillet, reduce the heat to medium and pour in the chicken broth. Bring it to a simmer, scraping the bottom of the skillet to deglaze and incorporate all the flavorful bits. Stir in the heavy cream and diced tomatoes, and let the mixture simmer for about 5 minutes until it thickens slightly.

        Combine Ingredients: Add the cooked chicken back to the skillet, and stir in the grated Parmesan cheese. Mix until the cheese is melted and the sauce is creamy. If the sauce is too thick, add some reserved pasta water until you reach your desired consistency.

          Add Spinach: Gently fold in the spinach leaves, cooking for an additional 1-2 minutes until they wilt.

            Toss in the Pasta: Add the cooked fettuccine to the skillet, tossing to coat the pasta evenly with the creamy sauce. Make sure everything is well combined.
