1 lb chicken sausage (sliced)

1 cup orzo pasta

3 cups low-sodium chicken broth

1 cup heavy cream

1 medium onion (diced)

3 cloves garlic (minced)

1 cup cherry tomatoes (halved)

1 cup spinach (fresh)

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional)

2 tablespoons olive oil

Salt and pepper to taste

½ cup grated Parmesan cheese

Fresh basil leaves (for garnish)

Instructions
 

Heat the Pan: In a large skillet or deep pan, heat the olive oil over medium heat.

    Cook Sausages: Add the sliced chicken sausage and cook until browned and heated through, about 5-7 minutes. Remove the sausage from the pan and set aside.

      Sauté Veggies: In the same pan, add the diced onion and minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent.

        Toast the Orzo: Add the orzo pasta to the pan, stirring for about 2 minutes to toast it lightly.

          Add Liquid: Pour in the chicken broth and bring to a gentle simmer. Reduce the heat and let it cook, stirring occasionally, for about 10 minutes, or until the orzo is al dente.

            Creamy Addition: Once the orzo is cooked, stir in the heavy cream, cherry tomatoes, spinach, Italian seasoning, and red pepper flakes (if using). Mix until combined. Cook for an additional 3-4 minutes until the spinach has wilted and everything is heated through.

              Finish with Cheese: Add the cooked chicken sausage back to the pan along with grated Parmesan cheese. Stir until the cheese melts and the mixture is creamy. Season with salt and pepper to taste.
