1 lb chicken sausage (sliced)

1 cup orzo pasta

4 cups low-sodium chicken broth

1 cup heavy cream

1 medium onion (chopped)

3 cloves garlic (minced)

1 cup baby spinach

1 cup cherry tomatoes (halved)

1 teaspoon Italian seasoning

1 tablespoon olive oil

Salt and pepper to taste

Grated Parmesan cheese (for serving)

Fresh basil (optional, for garnish)

Sauté the Sausage: In a large skillet, heat the olive oil over medium heat. Add the sliced chicken sausage and cook until browned (about 5-7 minutes). Remove sausage from the skillet and set aside.

    Cook the Aromatics: In the same skillet, add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 30 seconds until fragrant.

      Add Orzo: Stir in the orzo pasta and Italian seasoning, mixing well to coat the pasta with the aromatic mixture.

        Add Broth: Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to a simmer and let it cook uncovered for about 8-10 minutes, stirring occasionally, until the orzo is tender and most of the liquid has been absorbed.

          Stir in Cream and Vegetables: Reduce the heat to low and stir in the heavy cream. Then add the cooked chicken sausage, baby spinach, and halved cherry tomatoes. Continue to cook for about 3-4 minutes until the spinach wilts and everything is heated through.

            Season and Serve: Season with salt and pepper to taste. Serve hot, topped with grated Parmesan cheese and fresh basil if desired.
