Creamy Garlic Shrimp Pasta

8 oz fettuccine or linguine

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

3 tbsp butter

2 tbsp olive oil

1 tsp red pepper flakes (optional)

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Zest of 1 lemon

Juice of 1/2 lemon

Cook the Pasta: In a large pot of boiling salted water, add the fettuccine or linguine. Cook according to package instructions until al dente. Drain and set aside, reserving a little pasta water.

    Sauté the Shrimp: In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Add the garlic and sauté for about 30 seconds until fragrant.

      Add the Shrimp: Sprinkle the shrimp with salt, black pepper, and red pepper flakes. Add the shrimp to the skillet and cook for 2-3 minutes or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

        Make the Sauce: In the same skillet, add the chicken broth and bring to a simmer. Stir in heavy cream, lemon zest, and juice. Let it simmer for about 3-5 minutes, allowing the sauce to thicken slightly.

          Combine: Lower the heat and slowly whisk in the Parmesan cheese until melted and creamy. If the sauce is too thick, add a bit of the reserved pasta water to reach desired consistency.

            Mix Pasta and Shrimp: Return the shrimp to the skillet, then add the cooked pasta. Toss everything together until combined and well coated with the sauce. Add the remaining butter for extra richness and stir until melted. Adjust seasoning with salt and pepper.
