Creamy Korean Ssamjang (쌈장) Pasta🍝🌶

8 oz (225 g) spaghetti or your preferred pasta

1 tablespoon olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 cup heavy cream

3 tablespoons Ssamjang (Korean fermented bean paste)

2 tablespoons gochujang (Korean chili paste)

1 tablespoon soy sauce

1 teaspoon sugar

1/2 cup grated Parmesan cheese

1/2 cup sliced mushrooms (shiitake or button)

1 cup baby spinach

Salt and pepper to taste

Sliced green onions and sesame seeds for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.

    Sauté Aromatics: In a large skillet, heat olive oil over medium heat. Add the minced garlic and chopped onion. Sauté for about 2-3 minutes, until the onion becomes translucent and the garlic is fragrant.

      Add Mushrooms: Stir in the sliced mushrooms and cook for another 3-4 minutes, allowing them to soften.

        Create the Sauce: Lower the heat, then pour in the heavy cream. Whisk in the Ssamjang, gochujang, soy sauce, and sugar until well combined. Allow the sauce to simmer gently for about 5 minutes, stirring occasionally until it thickens slightly.

          Incorporate Pasta: Add the cooked spaghetti to the skillet, and toss to coat in the creamy sauce. If the sauce is too thick, gradually add some of the reserved pasta water until you reach your desired consistency.

            Add Spinach: Stir in the baby spinach and cook for an additional 2 minutes or until the spinach has wilted. Season with salt and pepper to taste.

              Finish with Parmesan: Remove the skillet from heat and stir in the grated Parmesan cheese until melted and well incorporated.
