Creamy Mushroom and Asparagus Chicken Penne

Ingredients
  

8 oz penne pasta

2 tbsp olive oil

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

8 oz fresh mushrooms, sliced (button or cremini work well)

1 cup asparagus, trimmed and cut into 1-inch pieces

2 cloves garlic, minced

1/2 cup chicken broth

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the penne according to package instructions until al dente. Drain and set aside, reserving a little pasta water.

    Sauté the Chicken: In a large skillet over medium-high heat, heat the olive oil. Add the chicken pieces and season with salt and pepper. Cook until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the sliced mushrooms and asparagus. Cook for about 5 minutes, or until the mushrooms are browned and asparagus is tender. Add the minced garlic and cook for an additional minute.

        Make the Sauce: Pour in the chicken broth, scraping the bottom of the skillet to deglaze. Allow it to simmer for a couple of minutes. Then, reduce the heat to low and stir in the heavy cream. Mix until combined and let it simmer gently for about 3-4 minutes to thicken.

          Combine Everything: Add the cooked chicken back into the skillet along with the cooked pasta. Stir in the Parmesan cheese and Italian seasoning. If the sauce is too thick, add some reserved pasta water until you reach the desired consistency. Adjust seasoning with salt and pepper, to taste.

            Serve: Remove from heat, garnish with fresh parsley, and serve hot.
