Creamy Tuscan Ravioli Soup

Ingredients
  

1 tablespoon olive oil

1 small onion, diced

3 cloves garlic, minced

2 carrots, diced

1 celery stalk, diced

4 cups vegetable broth

1 can (14.5 oz) diced tomatoes, with juice

1 cup heavy cream

1 teaspoon Italian seasoning

Salt and pepper to taste

1 package (9 oz) fresh cheese ravioli (or your choice of ravioli)

2 cups fresh spinach, roughly chopped

1/2 cup grated Parmesan cheese

Fresh basil for garnish

Instructions
 

Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened and fragrant.

    Add Broth and Tomatoes: Pour in the vegetable broth and the can of diced tomatoes, including their juices. Bring to a simmer.

      Season the Broth: Stir in the heavy cream, Italian seasoning, salt, and pepper. Let the soup simmer for about 5 minutes to allow the flavors to meld.

        Cook the Ravioli: Carefully add the fresh ravioli to the pot and cook according to package instructions, usually about 3-5 minutes until they are tender and floating.

          Add Spinach: Stir in the chopped spinach and let it wilt in the heat of the soup, about 2 minutes.

            Finish and Serve: Remove the soup from heat. Stir in the grated Parmesan cheese. Taste, and adjust seasoning if necessary. Serve hot, garnished with fresh basil leaves.
