Ingredients
  

1 lb ribeye steak (or your preferred cut)

Salt and black pepper (to taste)

2 tablespoons olive oil

1 cup cooked quinoa or brown rice

1 cup roasted sweet potatoes (diced)

1 cup fresh spinach or kale

1 avocado (sliced)

1/2 cup cherry tomatoes (halved)

1/4 cup black beans (cooked, rinsed, and drained)

1/4 cup corn (canned or fresh)

1/4 cup red onion (finely chopped)

1/2 cup cilantro (chopped)

Juice of 1 lime

1/4 cup feta cheese or queso fresco (optional)

Hot sauce (optional, for serving)

Instructions
 

Prepare the Steak: Season the ribeye steak generously with salt and black pepper. Heat the olive oil in a large skillet over medium-high heat. Once hot, add the steak and sear for about 3-4 minutes on each side for medium-rare, or until desired doneness. Remove from the skillet and allow it to rest for at least 5 minutes before slicing it thinly against the grain.

    Cook the Sweet Potatoes: In the same skillet, you can add more olive oil if needed, and toss in the diced sweet potatoes. Season with salt, pepper, and a pinch of paprika if desired. Cook for about 10-15 minutes, stirring occasionally, until they are golden brown and tender.

      Prepare the Base: In a large bowl, layer the cooked quinoa or brown rice at the bottom. This will serve as the base of your steak bowl.
