1 lb boneless, skinless chicken thighs

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp salt

1/2 tsp black pepper

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp paprika

1/2 tsp cayenne pepper (adjust to taste)

Vegetable oil for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp sriracha (adjust for spice preference)

1 tbsp lime juice

1 tsp honey (optional)

Chopped green onions for garnish

Marinate the Chicken: In a bowl, combine the chicken thighs and buttermilk. Ensure the chicken is fully submerged, cover, and refrigerate for at least 1 hour (or overnight for best results).

    Prepare the Coating: In a large bowl, mix together the flour, cornstarch, salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper. This will be your coating mixture for the chicken.

      Heat the Oil: In a deep skillet or fryer, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F (175°C).

        Coat the Chicken: Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, pressing firmly to ensure a good coating. Shake off any excess.

          Fry the Chicken: Carefully place the coated chicken thighs into the hot oil, in batches if necessary to avoid overcrowding. Fry for about 5-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F/75°C). Use a slotted spoon to transfer the chicken to a plate lined with paper towels to drain excess oil.

            Make the Bang Bang Sauce: In a separate bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, lime juice, and honey until well combined. Adjust seasoning and spice level to taste.

              Serve: Toss the crispy chicken pieces in a generous amount of Bang Bang sauce or drizzle sauce over the top. Garnish with chopped green onions. Serve with extra sauce on the side for dipping.
