Crispy Bang Bang Salmon Bites (Sweet & Spicy)

Ingredients
  

1 lb fresh salmon fillet, skin removed

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

Oil for frying (vegetable or canola)

Bang Bang Sauce:

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for spice level)

1 teaspoon honey

1 teaspoon lime juice

Chopped green onions for garnish (optional)

Instructions
 

Prepare the Salmon: Cut the salmon fillet into bite-sized cubes, about 1-inch pieces. Pat them dry with a paper towel and season with salt and pepper.

    Setup Breading Station: In three separate bowls, prepare your breading station.

      - In the first bowl, place the all-purpose flour.

        - In the second bowl, beat the two large eggs.

          - In the third bowl, combine the panko breadcrumbs with garlic powder, onion powder, paprika, and a pinch of salt.

            Bread the Salmon:

              - Dredge each salmon cube in flour, ensuring it's fully coated. Shake off the excess.

                - Dip the floured salmon into the beaten eggs, allowing any excess to drip off.

                  - Finally, coat the salmon in the seasoned panko breadcrumbs, pressing gently to adhere. Repeat until all salmon cubes are breaded.

                    Fry the Bites:

                      - In a large skillet or frying pan, heat about 1/2 inch of oil over medium-high heat.

                        - Once oil is shimmering, carefully add the salmon bites in batches, ensuring not to crowd the pan.

                          - Fry each side for about 2-3 minutes or until they are golden brown and crispy.

                            - Remove the bites and place them on a paper towel-lined plate to drain excess oil.

                              Make the Bang Bang Sauce: In a small bowl, mix together the mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until well combined. Adjust the spice level by adding more or less sriracha based on your preference.

                                Serve: Arrange the crispy salmon bites on a serving platter, drizzled or served alongside the Bang Bang sauce. Garnish with chopped green onions if desired.
