500g boneless chicken thighs, cut into bite-sized pieces

1/2 cup cornstarch

1/2 cup all-purpose flour

1 tsp baking powder

1 tsp salt

1/2 tsp black pepper

2 large eggs, beaten

Vegetable oil, for frying

4 cloves garlic, minced

1/2 cup honey

1/4 cup soy sauce

1 tbsp rice vinegar

1 tsp sesame oil

1 tsp red pepper flakes (optional)

Green onions, sliced (for garnish)

Sesame seeds (for garnish)

Prepare Chicken: In a bowl, combine cornstarch, all-purpose flour, baking powder, salt, and black pepper. In a separate bowl, whisk the beaten eggs. Dip each piece of chicken first into the egg, then coat thoroughly with the flour mixture. Set aside on a plate.

    Heat Oil: In a large skillet or wok, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of the batter in - it should sizzle and rise.

      Fry Chicken: Once the oil is hot, carefully add the coated chicken pieces in batches, making sure not to overcrowd the pan. Fry until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels.
