1 lb fresh salmon fillet, skin removed and cut into 1-inch cubes

1/2 cup all-purpose flour

1/2 cup breadcrumbs (Panko preferred for extra crunch)

1 large egg, beaten

1/4 cup honey

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon olive oil

1 tablespoon sesame oil

1 teaspoon cornstarch

Salt and pepper to taste

2 green onions, finely chopped (for garnish)

Sesame seeds (optional, for garnish)

Prepare the Salmon: In a bowl, season the salmon cubes with salt and pepper. Set aside.

    Make the Breading Station: Set up three bowls. In the first bowl, place the flour. In the second bowl, beat the egg. In the third bowl, combine the breadcrumbs with a pinch of salt and pepper.

      Coat the Salmon: Dredge each salmon cube in flour, shaking off the excess. Dip it in the beaten egg, then roll it in the breadcrumb mixture until fully coated. Repeat with all salmon cubes.

        Pan-Fry the Bites: Heat olive oil and sesame oil in a large skillet over medium-high heat. Once hot, add the salmon bites in a single layer (you may need to do this in batches). Cook for about 3-4 minutes on each side until golden and crispy. Remove from the skillet and set aside.

          Make the Honey Garlic Sauce: In the same skillet, reduce the heat to medium. Add minced garlic and sauté for about 30 seconds until fragrant. Then, add honey, soy sauce, and cornstarch mixed with a tablespoon of water, stirring until a smooth sauce forms.

            Combine: Gently add the crispy salmon bites back into the skillet, tossing to coat them evenly in the honey garlic sauce. Make sure to cook for an additional 1-2 minutes until the sauce slightly thickens.
