4 boneless, skinless chicken breasts

1 cup feta cheese, crumbled

½ cup all-purpose flour

1 teaspoon paprika

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

2 large eggs

1 cup panko breadcrumbs

¼ cup hot honey (store-bought or homemade)

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare Chicken: If the chicken breasts are thick, consider slicing them in half horizontally to create thinner cutlets, ensuring a more even cook.

      Feta Mixture: In a small bowl, mix crumbled feta cheese with a drizzle of hot honey (reserve some for drizzling later) until combined. Set aside.

        Bread the Chicken:

          - In one bowl, mix flour, paprika, garlic powder, onion powder, salt, and pepper.

            - In a second bowl, whisk the eggs until well-beaten.

              - In the third bowl, pour the panko breadcrumbs.

                Coat the Chicken: Dip each piece of chicken first in the flour mixture, ensuring an even coat, shaking off excess. Next, dip it into the egg mixture, and finally, coat it with the panko breadcrumbs, pressing gently to make sure the breadcrumbs stick well.

                  Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Once hot, add the breaded chicken pieces, cooking for about 3-4 minutes on each side or until golden brown and crispy. You may need to do this in batches depending on the size of your skillet.

                    Bake: Transfer the seared chicken to the lined baking sheet. Top each piece with the feta mixture. Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through (internal temperature should be 165°F/74°C) and the feta is slightly melted.

                      Drizzle & Serve: Remove from the oven and drizzle with the remaining hot honey. Garnish with freshly chopped parsley if desired. Serve hot with your favorite sides, such as roasted vegetables or a simple salad.
