4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1/2 cup ricotta cheese

1/2 cup mozzarella cheese, shredded

1/4 cup sun-dried tomatoes, chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

2 tablespoons olive oil

1/2 cup chicken broth

Fresh parsley for garnish (optional)

Instructions
 

Preheat the oven to 375°F (190°C).

    In a mixing bowl, combine the ricotta cheese, mozzarella cheese, chopped spinach, sun-dried tomatoes, minced garlic, oregano, basil, and a pinch of salt and pepper. Mix well until all ingredients are well incorporated.

      Prepare the chicken breasts by carefully slicing each breast horizontally to create a pocket, being cautious not to cut all the way through.

        Stuff each chicken breast with the prepared cheese and spinach mixture, dividing it evenly among the four breasts. Use toothpicks or kitchen twine to secure the openings if necessary.

          Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the stuffed chicken breasts, searing them for about 3-4 minutes on each side until golden brown.

            Pour the chicken broth into the skillet around the chicken and bring to a simmer.

              Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through (165°F or 74°C internal temperature).

                Remove from the oven and let the chicken rest for 5 minutes before serving. Garnish with fresh parsley if desired.

                  Serve the stuffed chicken breasts hot, drizzled with the pan juices, and enjoy!
