For the pastry:

2 ½ cups all-purpose flour

1 teaspoon salt

2 teaspoons baking powder

½ cup cold unsalted butter, cubed

½ cup cold water

1 tablespoon turmeric or curry powder (for color and flavor)

For the beef filling:

1 lb ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

1 Scotch bonnet pepper, finely diced (adjust to taste)

1 teaspoon ground allspice

1 teaspoon dried thyme

1 teaspoon paprika

1 teaspoon white vinegar

1 tablespoon soy sauce

Salt and pepper to taste

1 tablespoon vegetable oil

For egg wash:

1 egg, beaten

Instructions
 

Prepare the Pastry:

    - In a large mixing bowl, combine the flour, salt, baking powder, and turmeric (or curry powder). Mix well.

      - Cut in the cold butter with a pastry cutter or your fingertips until the mixture resembles coarse crumbs.

        - Gradually add cold water until the dough comes together. Knead gently on a floured surface for about 1-2 minutes.

          - Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

            Make the Filling:

              - In a skillet over medium heat, heat the vegetable oil. Add the chopped onion and cook until softened, about 5 minutes.

                - Stir in the minced garlic and diced Scotch bonnet pepper, cooking for another minute.

                  - Add the ground beef, breaking it apart with a spoon. Cook until browned, approximately 5-7 minutes.

                    - Season with allspice, thyme, paprika, white vinegar, soy sauce, salt, and pepper. Mix thoroughly and let cool.

                      Assemble the Patties:

                        - Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

                          - Remove the chilled dough from the fridge and divide it into 8 equal pieces. Roll each piece into a ball and then flatten it into a disk.

                            - On a lightly floured surface, roll each disk into a circle about 6 inches in diameter.

                              - Place about 2 tablespoons of the beef filling in the center of each circle. Fold the dough over to create a half-moon shape and crimp the edges with a fork to seal.

                                Bake the Patties:

                                  - Place the patties on the prepared baking sheet. Brush the tops with the beaten egg for a golden finish.

                                    - Bake in the preheated oven for 25-30 minutes, or until golden brown.

                                      Serve:
