Ingredients
  

1 kg chicken pieces (preferably thighs and drumsticks)

1 cup coconut milk

2 tablespoons vegetable oil

1 large onion, finely chopped

4 cloves garlic, minced

1-inch piece ginger, grated

2 green chilies, slit (adjust for spice preference)

2 teaspoons ground coriander

1 teaspoon ground cumin

1 teaspoon turmeric powder

1 teaspoon garam masala

Salt, to taste

Juice of 1 lime

Fresh cilantro leaves for garnish

Serve with rice or chapati

Marinate the Chicken: In a large bowl, combine the chicken pieces with half of the lime juice, ground coriander, cumin, turmeric, and salt. Mix well and let it marinate for at least 30 minutes (preferably overnight in the fridge for better flavor).

    Cook the Chicken: Heat the vegetable oil in a large skillet or pot over medium heat. Add the chopped onions and sauté until they turn golden brown, about 5-7 minutes.

      Sauté Aromatics: Stir in the minced garlic, grated ginger, and green chilies, cooking for an additional 2-3 minutes until fragrant.

        Add Chicken: Add the marinated chicken to the pot, cooking for 5-6 minutes until the pieces are browned on all sides.

          Add Coconut Milk: Pour in the coconut milk, and stir to combine. Bring the mixture to a gentle simmer.

            Simmer: Reduce the heat to low, cover the pot, and let it simmer for about 30-35 minutes, or until the chicken is cooked through and tender. Stir occasionally to prevent sticking.

              Final Touches: Once the chicken is cooked, sprinkle in the garam masala and mix well. Adjust seasoning with salt and the remaining lime juice, if needed.
