2 large cucumbers, thinly sliced

1/4 cup rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon honey or agave syrup

1 teaspoon red pepper flakes (adjust to taste)

2 green onions, finely chopped

1 tablespoon toasted sesame seeds

Fresh cilantro leaves for garnish (optional)

Salt to taste

Prepare the Cucumbers: Wash cucumbers and slice them thinly using a sharp knife or mandoline. For a more tender texture, you can sprinkle them lightly with salt and let them sit for 10 minutes, then pat them dry.

    Make the Dressing: In a mixing bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, and red pepper flakes until well combined.
