Easy Asian Cucumber Salad

2 large English cucumbers

1 teaspoon salt

1 tablespoon rice vinegar

1 tablespoon soy sauce

1 tablespoon sesame oil

1 teaspoon sugar or honey

1 garlic clove, minced

1 teaspoon grated fresh ginger

1 tablespoon sesame seeds

2 green onions, thinly sliced

A handful of fresh cilantro or mint leaves, chopped (optional for garnish)

Instructions
 

Start by washing the cucumbers thoroughly. Slice them thinly into rounds or half-moons, depending on your preference.

    Place the sliced cucumbers in a large bowl and sprinkle with salt. Toss gently and let them sit for about 15 minutes to draw out excess moisture.

      While the cucumbers are resting, prepare the dressing. In a small bowl, combine the rice vinegar, soy sauce, sesame oil, sugar or honey, minced garlic, and grated ginger. Whisk until well mixed.

        After the cucumbers have rested, drain the excess water. Pat them dry with a paper towel if needed.

          Pour the dressing over the cucumbers and toss until evenly coated.

            Add the sesame seeds and sliced green onions, mixing gently.

              Let the salad sit for about 10-15 minutes to allow the flavors to meld. You can also refrigerate it for a cooler taste.

                Serve fresh, garnished with chopped cilantro or mint if desired.
